  • 1/2 onion
  • 1 English cucumber
  • 1/2 cup sugar
  • 2 teaspoons kosher salt
  • 3/4 cup sherry vinegar

How to Make

  • Step 1: Slice onion and cucumber as thinly as possible (1/16th inch slices) and then place both in an airtight container.

  • Step 2: In a saucepan over medium heat bring the sugar, salt and 3/4 cup water to a simmer, stirring occasionally until sugar dissolves. Remove from heat and stir in vinegar and then pour mixture over the cucumber and onions. Cover tightly and refrigerate overnight or up to one week.
