Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 1/2 cup onions, minced
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon white pepper
  • 1 clove garlic, smashed
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons green curry paste
  • 1 cup carrots, grated
  • 3 mushrooms, minced
  • 1/4 cup frozen spinach
  • 1/2 cup celery diced, leaves also
  • 1 cup red bell pepper, minced
  • 6 cups chicken broth
  • 15 ounces coconut milk (1 can)
  • 1/8 teaspoon tabasco sauce, to taste
  • 2 tablespoons soy sauce
  • 1 pound boneless, skinless chicken breast, diced
  • 7 ounces dry white jasmine rice (1 cup)
  • Garnish
  • 1/4 cup cilantro, minced
  • 2 tablespoons lime juice

How to Make

  • Step 1: Heat oil, and add onions, celery and bell pepper.

  • Step 2: Season lightly.

  • Step 3: Cook until softened.

  • Step 4: Add chicken breast and cook 10 minutes.

  • Step 5: Add garlic and green curry paste

  • Step 6: Add rest of ingredients.

  • Step 7: Cover and simmer on low for 30 minutes.

  • Step 8: Season to taste.

  • Step 9: Stir in cilantro.

  • Step 10: Use as much fresh lime juice as you like.
