  • 1/2 cup mayonnaise (or egg-free mayo of choice)
  • 3 tablespoons of chipotle sauce (Cholula)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • Salad Mix
  • 1 romaine lettuce head
  • 1/2 cup corn (fresh or thawed frozen)
  • 1/2 cup black beans, rinsed
  • 2 teaspoons chili powder
  • 1 tablespoon lime juice, fresh
  • 1/3 cup onion, diced
  • 1/3 cup poblano pepper, diced
  • 1/3 cup tomato, diced
  • 1 bag of It’s Jerky Y’all Prickly Pear Chipotle
  • Cilantro and sliced Jalapeños for garnish (optional)

How to Make

  • Step 1: Wash and rough chop the romaine lettuce. Place it in a large serving bowl as the base of the salad.

  • Step 2: Rinse the black beans thoroughly using a strainer. Combine the beans with the fresh (or thawed frozen) corn in a small bowl. Add lime juice and chili powder, then mix well to coat.

  • Step 3: Dice the onion, poblano pepper, and tomato into small, even pieces. Add them to the serving bowl on top of the lettuce.
