Step 2: Sauce: Heat butter and add salt and orange zest.
Step 3: Add flour and cook a minute.
Step 4: Add reserved 1/4 cup beet juice and whisk.
Step 5: Add orange juice and whisk.
Step 6: Cook until thickened.
Step 7: Add beets and cream, but don't boil.
Step 8: Serve very hot.
