Ingredients

The ingredients are:
  • 1 English cucumber
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sugar (omit if using seasoned rice vinegar)
  • 1/2 teaspoon salt
  • 1/16 teaspoon crushed red pepper (to taste)

How to Make

  • Step 1: Wash the outside of the cucumber well, using a veggie wash. Cut in half lengthwise, then cut each half lengthwise. Using the back of a chef's knife, gently smash each piece. Not too much! Just enough to break them down a bit. Slice into 1 inch pieces (bite size) and place them in a bowl.

  • Step 2: Add the remaining ingredients and stir to coat evenly. Taste and adjust seasoning, as needed. Set aside until serving time. If preparing early, refrigerate but remove 30 minutes before serving.
