  • 1/8 teaspoon kosher salt
  • 1/4 cup whole milk
  • 1 1/2 tablespoons butter
  • 1 cup blueberries, fresh or frozen
  • 1 tablespoon blueberry preserves
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • 1/4 cup pecans, coarsely chopped and toasted

How to Make

  • Step 1: Bring 3 cups water to a boil. Stir in the oats, flaxseed, and salt. Reduce heat to medium-low; cook for 6 minutes or until tender, stirring frequently.

  • Step 2: Stir in the milk and butter.

  • Step 3: While oats are cooking, combine the blueberries and the next 4 ingredients in a microwave safe dish. Microwave at high for 1 1/2 minutes, stirring every 30 seconds.

  • Step 4: Divide the oatmeal among 4 bowls. Top with blueberries and pecans.
