Ingredients

The ingredients are:
  • 2 bacon slices, cut into small pieces
  • 4 tablespoons green bell pepper, chopped
  • 4 tablespoons red bell pepper, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon chili powder
  • 1 teaspoon parsley, chopped
  • 2 cups corn, cooked, drained
  • 1 cup white hominy, canned

How to Make

  • Step 1: In a skillet cook bacon until crisp, remove bacon to paper toweling, but keep bacon fat in skillet.

  • Step 2: In skillet stir fry the peppers in the bacon fat and then add the next 4 ingredients (-parsley).

  • Step 3: In a baking dish combine all ingredients except for bacon. Crumble bacon on top of mixture.

  • Step 4: Place in oven at 350 degrees F for 15-20 minutes and serve warm. (Original recipe did not give oven temp but just said keep warm in oven)
