Step 1: Heat butter and oil.
Step 2: Add onions and shallots and saute until translucent.
Step 3: Season lightly.
Step 4: Add mushrooms and cook until browned.
Step 5: Add garlic cook a minute.
Step 6: Add beans, veggie stock, thyme, mustard and Worcestershire sauce.
Step 7: Simmer until thickened mashing beans a little.
Step 8: Add sour cream and buttermilk and cook at low simmer, don't boil.
Step 9: Season to taste.
