  • 1 tablespoon butter
  • 1 french shallot, minced
  • 1 cup white onion, diced
  • 2 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 1/8 teaspoon dried thyme
  • 1 tablespoon white balsamic vinegar
  • 1 cup vegetable stock
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 30 ounces butter beans, undrained (2 cans)
  • 4 ounces sour cream
  • 2 tablespoons buttermilk
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper, to taste

How to Make

  • Step 1: Heat butter and oil.

  • Step 2: Add onions and shallots and saute until translucent.

  • Step 3: Season lightly.

  • Step 4: Add mushrooms and cook until browned.

  • Step 5: Add garlic cook a minute.

  • Step 6: Add beans, veggie stock, thyme, mustard and Worcestershire sauce.

  • Step 7: Simmer until thickened mashing beans a little.

  • Step 8: Add sour cream and buttermilk and cook at low simmer, don't boil.

  • Step 9: Season to taste.
