Step 1: To roast the garlic bulb; remove loose skins from outside of the bulb. Rub bulb with oil and wrap in foil. Bake 350 degrees F for about 1 hour. Cool enough for handling.
Step 2: To make dressing; cut off the tops of the roasted garlic and squeeze into food processor. Add in remaining ingredients; process until smooth. Refrigerate for 2 or more hours before using.
