Ingredients

The ingredients are:
  • 3 eggs, hardboiled and shelled
  • 2-3 tablespoons Tzatziki sauce (start with 2, add third if it seems too dry)
  • 1 tablespoon green onion, chopped
  • 2 kalamata olives, minced
  • 1 teaspoon freshly ground black pepper

How to Make

  • Step 1: Cut eggs the long way, carefully scoop out yolks into a small bowl.

  • Step 2: Add tzatziki sauce, the white part of green onion and olives. Mix together with egg yolks until fairly smooth.

  • Step 3: Stuff egg whites with equal amount of yolk mixture. You can put in a zip lock bag and cut off a corner in order to pipe yolks into whites.

  • Step 4: Sprinkle tops with green parts of onion and a few grinds of black pepper.
