Step 1: Preheat oven to 350° F.
Step 2: Cook pasta in heavily salted boiling water until al dente, drain.
Step 3: Meanwhile, in a large bowl, beat eggs.
Step 4: Add sour cream, parmesan cheese and garlic powder.
Step 5: Drain spaghetti, add to egg mixture with Monterey Jack cheese, spinach and half of the onions.
Step 6: Pour into a greased 2-quart baking dish.
Step 7: Cover and bake at 350° F for 30 minutes or until bubbly.
Step 8: Top with remaining onions; return to the oven for 5 minutes or until onions are golden brown.
