  • 1/4 teaspoon salt
  • 6 ounces pearled barley, quick (2/3 cup)
  • 1 pound fresh broccoli, cut into flowerets
  • 1 cup raisins
  • 1/2 cup red onion, diced
  • 10 ounces bacon, fried crisp, crumbled
  • 1 cup sunflower seeds
  • 8 ounces Italian dressing

How to Make

  • Step 1: Cook barley in salted water for 10 to 12 minutes for quick type, 50 minutes for regular type.

  • Step 2: Drain and rinse in cold water.

  • Step 3: Combine broccoli, raisins, onion, cooked crumbled bacon and sunflower seeds with the cooked barley.

  • Step 4: Mix in dressing.

  • Step 5: Refrigerate overnight.

  • Step 6: Stir occasionally.
