Step 1: Place the sauerkraut, shallot, horseradish, sugar, vinegar, mustard and spices in a slow cooker.
Step 2: Stir to evenly distribute all ingredients.
Step 3: Add the pork chop and cover in sauerkraut.
Step 4: Cook on low 8 hours or 4 hours on high.
Step 5: The pork should be easily shredded with a fork. Shred the pork chop and mix in.
Step 6: Season to taste.
