Step 1: Break up sausage into 1/2 inch pieces and put into a large soup pot (2 gallons) with diced onions.
Step 2: Season lightly.
Step 3: Saute sausage and onion over low heat until sausages are golden.
Step 4: Be careful not to burn onion.
Step 5: Drain fat.
Step 6: Add hot stock and bring to a simmer.
Step 7: Add tomatoes and rice and cook covered until rice is cooked 20 minutes.
Step 8: Add water as needed.
Step 9: Add spinach and cook 5 minutes.
Step 10: Season with salt and pepper to taste.
Step 11: Garnish each bowl of soup with a tablespoon of shredded mozzarella.
