Ingredients

The ingredients are:
  • 1 1/2 pounds Italian sausage, sweet
  • 1 cup onion, diced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 cups chicken broth
  • 2 cups Roma tomatoes, chopped
  • 7 ounces white rice, dry (1 cup)
  • 1/4 pound baby spinach, fresh, torn
  • 4 ounces mozzarella cheese, shredded

How to Make

  • Step 1: Break up sausage into 1/2 inch pieces and put into a large soup pot (2 gallons) with diced onions.

  • Step 2: Season lightly.

  • Step 3: Saute sausage and onion over low heat until sausages are golden.

  • Step 4: Be careful not to burn onion.

  • Step 5: Drain fat.

  • Step 6: Add hot stock and bring to a simmer.

  • Step 7: Add tomatoes and rice and cook covered until rice is cooked 20 minutes.

  • Step 8: Add water as needed.

  • Step 9: Add spinach and cook 5 minutes.

  • Step 10: Season with salt and pepper to taste.

  • Step 11: Garnish each bowl of soup with a tablespoon of shredded mozzarella.
