  • 2 pounds green beans, trimmed and halved
  • 1 cup walnuts, roughly chopped
  • 1 cup red onion, cut in rings and halved
  • 1/2 cup cucumber, peeled, seeded, and diced
  • 8 ounces crumbled feta cheese
  • Dressing
  • 3/4 cup olive oil
  • 1/2 cup fresh mint leaves, loosely packed, finely chopped
  • 1/4 cup white wine vinegar
  • 3/4 teaspoon salt, to taste
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Dressing: Mix together the dressing ingredients.

  • Step 2: Beans: In a pot with a vegetable basket and water up to the basket, place green beans.

  • Step 3: Bring to a boil and reduce heat, simmering for about 10 minutes.

  • Step 4: Remove beans from pot and run cold water over them and refrigerate.

  • Step 5: Toast walnuts in a 300°F oven for 10 minutes and cool.

  • Step 6: Serve: When ready to serve, combine the green beans, walnuts, onion rings and cucumber in a serving bowl.

  • Step 7: Pour dressing over salad and toss to coat thoroughly.

  • Step 8: Add crumbled feta cheese and toss lightly.
