Step 1: In a 10-inch nonstick skillet or skillet of choice, melt butter over moderate heat. Cook mushrooms, onion, pepper in butter until vegetables are almost tender. Add Worcestershire and mix throughout. Remove from the skillet; set aside.
Step 2: For each sandwich, layer a slice of bread, a slice (or 2) of American or cheddar cheese, 1/4 of the mushroom-onion mixture and mozzarella cheese, and top with another slice of bread.
Step 3: In a shallow bowl, whisk together the eggs, milk and black pepper. Dip sandwiches in egg mixture to coat on both sides. Using the same skillet that the mushroom mixture was cooked, wipe out the skillet to remove any residue. Bring skillet to moderate heat and add butter until melted. Add a sandwich to the skillet (if you can fit 2 at a time, that's great, but make sure all corners are getting cooked evenly) until bread achieves a golden crust and cheeses begins to melt, turning over for even cooking on both sides.
