Ingredients

The ingredients are:
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, cut into 1-inch cubes
  • 1 tablespoon lemon juice
  • Dressing
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons lemon juice
  • 8 ounces plain nonfat greek yogurt
  • 1 tablespoon tahini
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salad
  • 8 cups romaine lettuce, chopped
  • 2 cups cucumber, peeled, chopped
  • 1 cup grape tomatoes, halved
  • 1/4 cup red onions, diced
  • 1/4 cup kalamata olives, pitted, halved
  • 1 tablespoon fresh parsley, minced
  • Topping
  • 2 ounces feta cheese

How to Make

  • Step 1: Combine oregano, garlic powder, 1/2 teaspoons pepper, and 1/4 teaspoons salt in a bowl.

  • Step 2: Sprinkle on chicken.

  • Step 3: Heat a nonstick skillet over medium-high heat.

  • Step 4: Add olive oil .

  • Step 5: Add chicken and spice mixture.

  • Step 6: Saute chicken until done.

  • Step 7: Drizzle with 1 tablespoons lemon juice and stir. Remove from pan.

  • Dressing

  • Step 8: Combine salt, pepper, to taste yogurt, tahini, and garlic in a small bowl, and stir well.

  • Step 9: Add enough lemon juice to make pourable but still thick.

  • Step 10: Toss in chicken if you wish or pour over chicken on salad, your choice

  • Salad

  • Step 11: Combine lettuce, cucumber, tomatoes, onions and olives.

  • Step 12: Place 2-1/2 cups lettuce mixture on each of four plates.

  • Step 13: Top each serving with 1/2 cup of chicken mixture and 1 tablespoons cheese.

  • Step 14: Drizzle each serving with 3 tablespoons yogurt mixture.
