Ingredients

The ingredients are:
  • Olive oil
  • 2 large sweet onions, diced
  • 1 pound quality ground beef
  • 1 pound quality Italian sausage, removed from the casings
  • 6 large cloves garlic minced
  • 15 ounces quality marinara sauce
  • 10 ounces Rotel tomatoes (1 can)
  • 1/2 tsp salt
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin (scant, don’t round)
  • 2 tablespoons quality generic chili powder (like Frontier)
  • 2 tablespoons variety specific chili powder (like red hatch, guajillo, chili de arbol or pasilla) (can just use more regular chili powder or more ancho)
  • 1 tablespoon ancho chili powder
  • 30 ounces Stagg Silverado Chili (2 cans)
  • 4 ounces green chiles, diced (1 can)
  • 3 tablespoons ketchup (heaping)
  • 1/2 teaspoon hot sauce, or more to taste

How to Make

  • Step 1: Saute the onions in oil on low heat until they breakdown and become very soft and sweet, about 30 minutes. Do not let them brown.

  • Step 2: Add the meat and cook until just done, working it constantly with a meat chopper until broken up very well.

  • Step 3: Add the garlic and saute for a few more minutes.

  • Step 4: Add everything else and stir to mix thoroughly.

  • Step 5: Simmer until slightly thickened, about 20 minutes, and serve on hot dogs or hamburgers.

  • Step 6: Also works well as a standalone chili or on dishes like huevos rancheros.
