Ingredients

The ingredients are:
  • 2 to 3 onions, diced coarse
  • 2 tablespoons butter
  • 2 to 3 teaspoons curry powder
  • 1 pound hamburger
  • 1 (15 ounce) can mixed vegetables (I use Veg All)
  • 1 (15 ounce) can diced tomatoes
  • Salt
  • 1 cup raw rice
  • 1/3 head lettuce
  • 1 large tomato, diced
  • 1/2 medium cucumber, diced
  • 2 cups potato chips
  • 1/2 cup salted peanuts
  • 1/2 cup flaked coconut
  • Lemon juice
  • 1/2 banana (for each serving)

How to Make

  • Step 1: Dice the onions and fry gently in butter for a few minutes till almost done; add the curry powder and stir well.

  • Step 2: Add hamburger to the pan and cook till done; add the can of vegetables and tomatoes and simmer for 1/2 hour (if you need to, add a little water); salt to taste.

  • Step 3: If more curry is needed, mix it with a little water before adding it to the mixture. Cook the rice.

  • Step 4: While the rice is cooking, make a small salad using the lettuce, tomatoes, and cucumbers (these are general amounts; use what you need for the number of people you are serving).

  • Step 5: Put everything in separate bowls and line them up on a buffet.

  • Step 6: When you are ready to eat, line food up on your plate as follows: cooked rice, curry mixture, salad, crushed potato chips, peanuts, shredded coconut, lay 1/2 banana sliced lengthwise on either side of the mound, and then squeeze lemon juice all over it. ENJOY!
