Ingredients

The ingredients are:
  • For the marinade
  • 1 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 1 cup brown sugar
  • 5 garlic cloves
  • 5 bay leaves
  • For the pork
  • 3 banana leaves, optional and I used foil
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons coarse salt
  • 1/2 teaspoon pepper
  • 4 pounds pork tenderloins

How to Make

  • Step 1: *To make the marinade* in a bowl mix together the marinade ingredients.

  • Step 2: Preheat oven to 350 degrees F.

  • Step 3: In a skillet or dutch oven over high heat heat the oil. Sprinkle salt and pepper over the tenderloins. Once oil is hot add tenderloins to skillet for brown for a few minutes on each side and then remove them from the skillet and add to the baking dish. pour marinade over the tenderloins and cover with banana leaves or foil. Place in oven and cook for 1 hour and 20 minutes and then remove from oven and remove foil or the banana leaves. Transfer meat to cutting board and let rest.

  • Step 4: Pour marinade into saucepan; discarding bay leaves and bring to a simmer over medium high heat and let it simmer for 10-15 minutes or until it is thick and coats back of spoon.

  • Step 5: Slice meat into 1/2 inch thick slices and serve with sauce drizzled on top.
