Step 1: In a dry skillet over medium heat, add the mushrooms and cook, stirring occasionally, until just beginning to brown, about 5 minutes. Sprinkle with salt and cook stirring until beginning to “sweat”, about 2 more minutes.
Step 2: Stir in the butter. Once the butter begins to bubble, add the cream, soy sauce, and thyme. Reduce the heat to a low simmer and cook, stirring often, until the sauce is thickened slightly, 6 to 7 minutes. Season with salt to taste.
