Ingredients

The ingredients are:
  • 1 pound cremini mushrooms, quartered
  • 3/4 teaspoon salt, plus more to taste (kosher)
  • 2 tablespoons butter (unsalted)
  • 1 cup heavy cream
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon fresh thyme leaves (or fresh tarragon)

How to Make

  • Step 1: In a dry skillet over medium heat, add the mushrooms and cook, stirring occasionally, until just beginning to brown, about 5 minutes. Sprinkle with salt and cook stirring until beginning to “sweat”, about 2 more minutes.

  • Step 2: Stir in the butter. Once the butter begins to bubble, add the cream, soy sauce, and thyme. Reduce the heat to a low simmer and cook, stirring often, until the sauce is thickened slightly, 6 to 7 minutes. Season with salt to taste.
