Ingredients

The ingredients are:
  • 1 1/2 cups clam juice (bottled)
  • 1/4 cup ketchup
  • 2 tablespoons chili bean paste
  • 2 tablespoons rice vinegar
  • 1 tablespoon vegetable oil
  • 5 - 6 cloves garlic, peeled and halved
  • 1 teaspoon minced ginger
  • 12 ounces white fish fillets, cut into 1-inch pieces (such as halibut, snapper or grouper, etc.)
  • 2 green onions, chopped
  • 1 teaspoon sesame oil
  • 1 fresh hot red chile, thinly sliced
  • 8 cherry tomatoes
  • 4 sprigs cilantro, for garnish

How to Make

  • Step 1: To Make the Sauce: Combine the first 4 ingredients in a medium bowl and mix well.

  • Step 2: Place a wok or stir-fry pan over medium-high heat until hot. Add the oil, swirling to coat the sides. Add the garlic and ginger and cook, stirring, until fragrant, about 20 seconds. Add the sauce and bring to a boil.

  • Step 3: Add the fish and half of the green onions and return to a boil. Reduce the heat to medium-low, cover, and simmer until the fish is cooked through, about 5 minutes. Add the sesame oil, chile, and tomatoes and cook for 5 minutes more.

  • Step 4: Transfer to a serving bowl. Garnish with cilantro and remaining green onions and serve.
