Step 1: Preheat air fryer to 400-degrees F.
Step 2: Drizzle the potatoes with oil. Distribute with remaining ingredients (rosemary - pepper); toss gently to coat.
Step 3: Place on ungreased tray in air-fryer basket. Cook until the potatoes are golden brown and tender, 10 - 12 minutes, turning once (if required, it all depends on the air -fryer). Sprinkle with lemon peel, additional salt and pepper, if needed and an additional squeeze of lemon juice, if you'd like. Sprinkle with parsley (optional).
