Ingredients

The ingredients are:
  • 2 pounds small red potatoes, unpeeled, cut into wedges
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 tablespoon, lemon zest
  • 1 1/2 tablespoons minced fresh rosemary or 1 - 1 1/2 teaspoons dried fresh rosemary, crushed
  • 6 - 8 garlic cloves, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon zest
  • Lemon juice, optional (for squeezing of top of potatoes after cooked)
  • 4 tablespoons parsley, chopped, for sprinkling (optional)

How to Make

  • Step 1: Preheat air fryer to 400-degrees F.

  • Step 2: Drizzle the potatoes with oil. Distribute with remaining ingredients (rosemary - pepper); toss gently to coat.

  • Step 3: Place on ungreased tray in air-fryer basket. Cook until the potatoes are golden brown and tender, 10 - 12 minutes, turning once (if required, it all depends on the air -fryer). Sprinkle with lemon peel, additional salt and pepper, if needed and an additional squeeze of lemon juice, if you'd like. Sprinkle with parsley (optional).
