Ingredients

The ingredients are:
  • 4 fillets (1 1/4 pounds) tilapia fish (you want a firm white fish such as tilapia, snapper or catfish)
  • Blackening seasoning (1 tablespoon, there are many brands - Old Bay, Prudhommes Majic, and many others; or make your own)
  • 2 teaspoon orange juice, fresh
  • 4 hoagie (6 ounces) bread rolls (split in half)
  • 3 tablespoons butter
  • FOR SLAW
  • 2 1/2 cups cole slaw mix (the packaged kind with green, red and carrots)
  • 1 yellow onion (small red onion cut in quarters and thin sliced)
  • 1/4 cup mayonnaise
  • 1/8 cup sour cream (plain yogurt is another substitute)
  • 1/2 teaspoon cider vinegar
  • 1 tablespoon honey (you can add a bit more if you prefer it a bit sweeter)
  • 2 tablespoons fresh lime juice, fresh
  • 1 tablespoon fresh orange juice
  • 1/2 teaspoon orange zest
  • 1/2 cup chopped cilantro (fresh, more or less to taste)
  • Salt and pepper, to taste

How to Make

  • Step 1: Fish ... You want to make sure to take your fish out of the refrigerator, season it and let it "warm up." You never want to cook cold fish. And the same time, you don't want it to get too warm. Just 15-20 minutes is all you need. This will also allow time for the marinade to season the fish.

  • Step 2: Slaw ... As the fish is marinating, it is time to make the slaw. To a medium size bowl, add the honey, yogurt, lime juice, orange juice, orange zest, and cilantro and mix well. Then add the onion and cabbage and toss well to combine. Set off to the side to rest and absorb all the flavor while you finish off the fish.

  • Step 3: Rolls ... Take 1 tablespoon of the butter and spread on the rolls. I brown them in the same pan where I am making the fish, but you can do them under the broiler as well. Whatever method works best for you.

  • Step 4: Fish ... A couple of important NOTES for cooking blackened fish. IT DOES SMOKE. Best to cook outside, or make sure you have an overhead fan - otherwise, it will smoke a bit. Also, use a heavy pan, non stick will work, but I prefer my cast iron for this if possible or any HEAVY pan.

  • Step 5: Fry ... Add the remaining butter and bring to high heat. I sometimes will add just a drizzle of canola or vegetable oil to prevent the butter from burning. Add the fish and cook on the first side until it is good and blackened, you will be able to tell - about 4 minutes. Flip and continue to cook another 3-4 minutes. It will depend on the thickness of the fish. Also, the pan can alter the cooking time. The fish should be firm to the touch. Remove and set off to the side and drizzle on the orange juice.

  • Step 6: Sandwich ... I like to add a little slaw to the bottom bun, then the fish, and finish it with a bit more slaw on top of the fish. Top it off and ENJOY!
