Step 1: Mix all the marinade ingredients in a large Ziplock bag until the salt is dissolved, add the chicken, and seal the bag. Shake and swish to coat and marinate in the refrigerator for 24 hours.
Step 2: Preheat oven to 350 degrees Fahrenheit.
Step 3: Remove chicken from marinade and place on a metal grate, breast side up, in a roasting pan. Ensure the chicken is not sitting in the bottom of a roasting pan. (If you do not have a grate, place the chicken on top of rolled-up pieces of foil.)
Step 4: Roast chicken, uncovered for 90 minutes to 2 hours, or until the meat thermometer inserted in the thickest part of the chicken, reads 165 degrees Fahrenheit. This will depend on the weight or whether it is an organic chicken or another type of chicken.
Step 5: Allow the chicken to rest for about 15 minutes before taking it apart.
