Ingredients

The ingredients are:
  • 2 ripe avocados, halved and pitted
  • 4 slices bacon
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

How to Make

  • Step 1: Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.

  • Step 2: Scoop out some of the avocado flesh to create a larger cavity for the fillings. Dice the scooped avocado and set aside.

  • Step 3: In a bowl, mix the cherry tomatoes, diced avocado, olive oil, lemon juice, salt, and pepper.

  • Step 4: Place the avocado halves on a plate and fill them with the tomato mixture.

  • Step 5: Crumble the cooked bacon over the top and garnish with fresh parsley if desired.
