Ingredients

The ingredients are:
  • 16 ounces lima beans, dried
  • 2 tablespoons bacon grease
  • 1 pound kielbasa, sliced
  • 2 cups yellow onions, chopped
  • 2 celery ribs, sliced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup green bell pepper, diced
  • 1 sweet Hungarian wax pepper, diced
  • 2 Roma tomatoes, diced
  • 1 pound potatoes, Yukon gold, peeled, chopped
  • 1 cup turnip, peeled, diced
  • 2 tablespoons tomato paste
  • 1/4 teaspoon liquid smoke
  • 3 tablespoons Hungarian paprika
  • 1/2 teaspoon dried thyme
  • 1 1/2 teaspoons dried marjoram
  • 1 teaspoon crushed caraway seeds
  • 3 bay leaves
  • 2 teaspoons salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound smoked ham hock
  • 6 cups chicken broth

How to Make

  • Step 1: Soak beans in crock pot overnight, drain the next day.

  • Step 2: In a pan, heat bacon grease or oil in a Dutch oven and cook the onions until soft and translucent, 5-7 minutes.

  • Step 3: Add the smoked sausage and cook for another 3-4 minutes.

  • Step 4: Add the veggies and garlic and cook for another 5 minutes.

  • Step 5: Add the tomato paste and seasonings and stir to combine and cook for another minute or two.

  • Step 6: Add to crockpot with beans.

  • Step 7: Add chicken broth and smoked ham hock to the pot.

  • Step 8: Cook low 6 hours.

  • Step 9: Shred the meat off the bone and return the meat to the pot and remove bay leaves.

  • Step 10: Season to taste.
