Step 1: Line a baking sheet with parchment paper. Set aside.
Step 2: In a small bowl, whisk together the cream, egg, yolk, and vanilla.
Step 3: In a medium mixing bowl, whisk together the flour, sugar, baking powder, coffee, cardamom, and salt. Add butter and use a pastry blender to work it into a coarse meal.
Step 4: Add the egg mixture to the flour mixture. Mix with a fork until the dough barely comes together. Don't overmix - it results in hard scones!!!
Step 5: Turn the dough out onto a clean surface. Kneed 3-4 times, just until dough comes together. Don't overwork! Press into a 6 inch disk and cut into 8 equal triangles. Transfer to the prepared baking sheet and place in freezer for 30 minutes.
Step 6: Preheat oven to 400 F.
Step 7: Brush tops of scones with the remaining cream. Sprinkle tops with coarse sugar. Bake for 17-20 minutes, until tops are brown on top. Transfer to a wire rack to cool. Serve warm.
