Ingredients

The ingredients are:
  • 2 teaspoons bacon grease
  • 1 medium onion, chopped
  • 3 green onions, chopped with some of the greens reserved for garnish
  • 1 cup chopped carrots
  • 1 small Yukon Gold potato, cubed
  • 4 cups cooked shredded chicken
  • 4 cups chicken broth (I made mine using Knorr's bouillon so didn't need to add extra salt or seasonings to the soup)
  • 1 16 ounce) can navy beans, drained and rinsed

How to Make

  • Step 1: Saute the onions, the carrot, and the potato in bacon grease or olive oil until they are beginning to soften Add the cooked chicken and the chicken broth. Bring to a boil and reduce heat.

  • Step 2: Add the drained and rinsed navy beans and gently stir. Continue simmering for 30-40 minutes or until the veggies are completely cooked.

  • Step 3: Ladle into bowls, garnish with reserved green onion tops, and enjoy. Corn bread would be a super side.
