Ingredients

  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups oatmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup oil (canola oil)
  • 2 large eggs
  • 1 1/2 to 1 3/4 pounds apples (peeled, cored and GRATED, 5-6 apples)
  • 1/2 cup walnuts, chopped

How to Make

  • Step 1: Preheat oven to 350. Grease and flour a 9 x 5 inch loaf pan.

  • Step 2: Mix all dry ingredients together in a large mixing bowl.

  • Step 3: Lightly beat eggs in small bowl. Mix in oil and add to dry ingredients, stirring until moistened. (Batter will be thick) Fold in apples and nuts and pour into loaf pan.

  • Step 4: Bake 1 hour or until toothpick comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool on rack.
