Step 1: Sauté the onion over low heat in a heavy bottom pan for about 15 minutes, until very soft and sweet and just light brown.
Step 2: Add the garlic and continue to sauté for a minute or two.
Step 3: Increase the heat to medium low and add all the rest of ingredients.
Step 4: Bring to a simmer and then turn the heat back down to low.
Step 5: Stir, simmering until slightly thickened and reduced, about 30 minutes.
Step 6: Allow to cool and refrigerate.
