Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1/2 medium sweet onion or 1/4 large, finely minced (sweet onion only)
  • 6 cloves of garlic, finely minced
  • 32 ounces crushed tomatoes or tomato passata
  • 3/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1 cup chopped fresh basil
  • 1 cup chopped fresh cilantro
  • 1/2 teaspoon ground thyme
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Hot sauce to taste

How to Make

  • Step 1: Sauté the onion over low heat in a heavy bottom pan for about 15 minutes, until very soft and sweet and just light brown.

  • Step 2: Add the garlic and continue to sauté for a minute or two.

  • Step 3: Increase the heat to medium low and add all the rest of ingredients.

  • Step 4: Bring to a simmer and then turn the heat back down to low.

  • Step 5: Stir, simmering until slightly thickened and reduced, about 30 minutes.

  • Step 6: Allow to cool and refrigerate.
