Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 1 pound beef stew meat, cut into small cubes
  • 1 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • 6 ounces tomato paste (1 can)
  • 1 teaspoon smoked paprika
  • 1 tablespoon Ras El Hanout spice mix
  • 2 pounds potatoes, cut into small chunks.
  • 6 cups water
  • 16 ounces frozen peas (1 bag)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • 1 teaspoon harissa, (hot sauce) to taste

How to Make

  • Step 1: Get spices ready.

  • Step 2: Brown meat in oil and add in salt & pepper, and onions.

  • Step 3: Add garlic at the end.

  • Step 4: Stir in tomato paste, stir it in for a minute or so, then add the other spices.

  • Step 5: Add water and cook until beef if tender about 1 hour.

  • Step 6: Add potatoes adding water as needed.

  • Step 7: Cover and cook on med/high heat until potatoes are almost cooked 20 minutes.

  • Step 8: Add in frozen peas, and more water; bring back to a boil for about 10 minutes or so (until it gets thick again).
