  • 1 tablespoon white vinegar
  • 1/4 teaspoon sugar
  • 1/2 ounces diced pimentos, diced, drained
  • 6 ounces artichoke hearts, drained and cut into fourths (1 can)
  • 2 ounces parmesan cheese, shaved (1/4 cup)
  • Dressing
  • 1/4 ounce parmesan cheese, grated (1 teaspoon)
  • 4 tablespoons vegetable oil
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper, to taste

How to Make

  • Step 1: Marinate red onions with sugar and white vinegar for 10 minutes.

  • Step 2: In a large bowl, combine iceberg lettuce, romaine lettuce, sliced onions, pimentos, artichoke hearts, and shaved parmesan.

  • Step 3: Toss and chill.

  • Dressing

  • Step 4: In a small bowl combine vegetable oil, olive oil, red wine vinegar, and salt and pepper to taste. Add a smidge of cheese.
