  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/4 cup white wine
  • 1 tablespoon lemon juice
  • 1 cup water
  • Sauce
  • 1 1/2 tablespoons flour
  • 8 ounces light cream (1 cup)
  • 2 tablespoons Dijon mustard
  • 1/16 teaspoon cayenne pepper
  • 1/8 teaspoon paprika

How to Make

  • Step 1: Dredge the chops in the flour, salt and pepper mixed together.

  • Step 2: Brown in hot butter on both sides, about 20 minutes, covered.

  • Step 3: Add wine and lemon juice and simmer for about 45 or 50 minutes, or until tender.

  • Step 4: Adding water as needed.

  • Step 5: Remove to warm serving platter.

  • Step 6: Make mustard sauce, stir flour into drippings in skillet until smooth.

  • Step 7: Stir in cream, mustard and cayenne.

  • Step 8: Cook, whisking 1 minute.

  • Step 9: Serve chops with sauce.

  • Step 10: Sprinkle with paprika.
