Ingredients

The ingredients are:
  • 1 tablespoon vegetable oil
  • 1 1/2 pounds Polish kielbasa sausage, patted dry with a paper towel (4 links)
  • 1 yellow onion, thinly sliced
  • Kosher salt and freshly ground black pepper
  • 4 poppy seed hot dog buns, fresh (regular buns will do)
  • Yellow mustard, to taste
  • 6 to 10 pickled sport peppers (if you're not in Chicagoland, substitute other peppers)

How to Make

  • Step 1: Preheat oven to 175ºF.

  • Step 2: Heat the oil over medium heat in a skillet. Add the sausages and cook on each side, undisturbed, until browned, about 5 minutes/ side. Keep warm in oven.

  • Step 3: Add the onions to the skillet and stir to combine with oil that's left. Season the onions with salt and pepper and cook over medium-low heat, undisturbed, until the bottom of the onions begin to caramelize, about 10 minutes. Stir only once, then cook for another 25 minutes, undisturbed. Once the onions are golden and soft, set aside.

  • Step 4: To serve: Place a sausage on a bun, spread with yellow mustard, top with an generous amount of caramelized onions and 2 or 3 sport peppers. Wrap the sandwich in deli paper, parchment paper or foil. Let sit for 5 minutes to get steamed up.
