Step 1: Bring oil and butter to high heat.
Step 2: Add rice (Deeply browning the rice gives the rice its distinct flavor).
Step 3: You must use the butter so it will brown.
Step 4: Do not use margarine, it will not work.
Step 5: This will take about 5 minutes.
Step 6: Add spices, garlic and onion.
Step 7: Brown lightly.
Step 8: Add water, and rest of ingredients, cover the pot and simmer on low heat until all water is absorbed about 20 minutes.
Step 9: Take off heat and leave covered for 5 minutes.
