  • 1/2 cup red bell pepper, diced
  • 1 serrano chili, minced
  • 1 cup frozen corn
  • 14 ounces black beans, drained, rinsed (1 can)
  • 2 ounces cheddar cheese, shredded, low fat
  • 1/2 cup grape tomatoes, sliced in half
  • Dressing
  • 16 ounces plain Greek yogurt
  • 2/3 cup mayonnaise (light)
  • 5 tablespoons canned chipotle in adobo sauce, liquid too
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon lemon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

How to Make

  • Step 1: Mix together salad dressing.

  • Step 2: Meanwhile, cook pasta in heavily salted boiling water until al dente and drain.

  • Step 6: Chill overnight.
