Step 1: In a saucepan over medium low heat add the sugar, evaporated milk, 1/2 cup of the whole milk and the eggs and whisk until combined and then cook, stirring constantly until thickened (30 minutes); strain mixture through a fine-mesh sieve into a large bowl and let cool.
Step 2: Once it has cooled add the pureed peach, peach soda and the rest of the milk (1 cup) and a pinch of salt, stir to combine.
Step 3: Pour into an ice cream maker and process according to manufacturer's directions and then transfer ice cream to a freezer safe container and freeze.
