Step 1: Preheat oven to 350°F. Line two baking sheets with parchment paper.
Step 2: In large bowl with hand mixer, beat butter and brown sugar 2 minutes. 'Beat in egg and vanilla.
Step 3: Add flour,spice, baking soda and salt; mix until combined. Fold in oats, apple and walnuts, if using.
Step 4: Drop 2-tablespoon scoops dough onto prepared baking sheets at least 2 inches apart. Flatten slightly.
Step 5: Bake until edges are golden, 13-14 minutes, swapping pans halfway through. Let cool slightly, then transfer to cooling rack. Serve warm and store leftovers in an airtight container.
