Ingredients

The ingredients are:
  • 2 pounds zucchini (5 medium )
  • 1 pound potatoes (2)
  • 1 clove garlic, smashed
  • 1 cup onion, diced
  • 6 ounces Laughing Cow cheese wedges (1 package)
  • 2 teaspoons chicken bouillon powder (they had 2 tablespoons)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, to taste

How to Make

  • Step 1: Clean and quarter zucchini and peel potatoes.

  • Step 2: Peel and chop onion.

  • Step 3: In a large pot, boil zucchini, garlic, potatoes and onion in water with bouillon (just covering them) and cook until very tender.

  • Step 4: Drain vegetables, but retain stock.

  • Step 5: Add cheese to hot veggies.

  • Step 6: With a blender, or with a hand blender, puree the cheese, zucchini, potatoes, onion and bouillon while adding stock, until desired consistency is reached. (If you're using a blender, do this in two batches.)

  • Step 7: Pour mixture back into large pot and bring to a boil. Salt and pepper to taste.
