Step 1: Pam spray crockpot.
Step 2: Get spices ready.
Step 3: Add chicken and seasoning lightly.
Step 4: Meanwhile, heat the oil in a large stockpot over medium heat.
Step 5: Add the butter and melt.
Step 6: Saute the onions and celery until the onions are translucent, about 6 to 7 minutes.
Step 7: Add the garlic, tarragon, oregano, paprika , salt and black pepper.
Step 8: Cook, stirring, for 3 or 4 minutes.
Step 9: Add the flour and stir until well-combined.
Step 10: Slowly whisk in the chicken broth.
Step 11: Pour into crockpot over chicken.
Step 12: Cook on low for 5 hours.
Step 13: Add tomato and evaporated milk.
Step 14: Cook 1 hour more.
Step 15: Remove chicken, debone and chop and add back into soup.
Step 16: Add spinach and cream.
Step 17: Season to taste.
