Ingredients

The ingredients are:
  • 2 pounds bone in chicken breasts
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon oil
  • 4 teaspoons butter
  • 1 cup onion, diced
  • 3 stalks celery, diced
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon dried oregano
  • 1 tablespoon sweet Hungarian paprika
  • 1/2 cup flour
  • 8 cups chicken broth
  • 14 ounces diced tomatoes (1 can)
  • 1 cup evaporated milk
  • 2 cups fresh baby spinach, thinly sliced
  • 4 ounces heavy cream

How to Make

  • Step 1: Pam spray crockpot.

  • Step 2: Get spices ready.

  • Step 3: Add chicken and seasoning lightly.

  • Step 4: Meanwhile, heat the oil in a large stockpot over medium heat.

  • Step 5: Add the butter and melt.

  • Step 6: Saute the onions and celery until the onions are translucent, about 6 to 7 minutes.

  • Step 7: Add the garlic, tarragon, oregano, paprika , salt and black pepper.

  • Step 8: Cook, stirring, for 3 or 4 minutes.

  • Step 9: Add the flour and stir until well-combined.

  • Step 10: Slowly whisk in the chicken broth.

  • Step 11: Pour into crockpot over chicken.

  • Step 12: Cook on low for 5 hours.

  • Step 13: Add tomato and evaporated milk.

  • Step 14: Cook 1 hour more.

  • Step 15: Remove chicken, debone and chop and add back into soup.

  • Step 16: Add spinach and cream.

  • Step 17: Season to taste.
