Step 1: Remove the skin from orange and cut the orange into quarters.
Step 2: Add the rind and orange flesh to blender jug or smaller bowl food processor.
Step 3: Add the eschalot, garlic, vinegar, mustard, and honey to blender jug and secure lid & blend for 20 seconds or until smooth and well combined.
Step 4: While motor is running remove blender's inner cap and gradually add oil until combined running for about 20 - 30 seconds.
Step 5: Season with salt and pepper, to taste .
Step 6: Serve with salad.
