  • 2 1/2 cups chicken broth
  • 8 ounces light cream, half & half (1 cup)
  • 16 ounces cooked boneless skinless chicken breast, cubed (2 cups)
  • 12 ounces cooked long grain white rice (1 1/2 cups )
  • 1 cup chicken broth
  • 16 ounces cheddar cheese, shredded (4 cups)
  • 2 tablespoons fresh parsley, minced

How to Make

  • Step 1: Melt butter in 4-quart saucepan.

  • Step 2: Add onion and cook over medium-high heat 1-2 minutes or until onion is softened.

  • Step 3: Stir in flour and red pepper.

  • Step 4: Add chicken broth and half & half.

  • Step 5: Continue cooking, stirring a lot, 4-5 minutes or until mixture comes to a full boil.

  • Step 6: Add chicken, rice and stock.

  • Step 7: Continue cooking, stirring occasionally, 2-3 minutes or until heated through.

  • Step 8: Remove from heat.

  • Step 9: Stir in cheese until melted.

  • Step 10: Ladle into serving bowls.

  • Step 11: Sprinkle each serving with parsley.
