  • 1 cup leftover cooked peas, carrots, and corn (can use frozen)
  • 2 cups mashed potatoes

How to Make

  • Step 1: Preheat oven to 350 degrees Fahrenheit.

  • Step 2: Place the chopped turkey in a 9-inch baking dish and top with the stuffing.

  • Step 3: Pour 1 cup of the gravy over the stuffing and turkey and press down lightly with a spatula.

  • Step 4: Add the vegetables and top with the mashed potatoes, spreading them evenly with a spatula.

  • Step 5: Cover the baking dish with foil and bake for 50 minutes; remove the foil and cook for another 10 minutes.

  • Step 6: Warm the remaining gravy in a microwave or heat in a saucepan on the stovetop.

  • Step 7: Remove the casserole from the oven and spoon into bowls. Serve with the gravy drizzled over top.
