Step 1: In a pot of heavily salted boiling water, blanch the carrots and beans to a point where they are still tender crisp.
Step 2: Drain and cool in ice water.
Step 3: In a large skillet heat oil and sauté the sliced potatoes & cook to 3/4 done.
Step 4: Add the onions and peppers, cubed ham and seasonings to taste.
Step 5: Add the chilled beans & carrots, stirring all the ingredients & flavors together.
Step 6: Sauté for 7 minutes.
