  • 1/2 pound potatoes, peeled & 1/2 inch diced (1 1/2 cups)
  • 6 ounces carrots, peeled & 1/2 inch diced (1 cup)
  • 3/4 cup frozen peas
  • 6 ounces onion, chopped (1 medium)
  • 2 tablespoons grapeseed oil (any neutral oil)
  • 1 teaspoon cumin seeds
  • 1 teaspoon minced ginger
  • 1 green chili, minced
  • 2 tablespoons cilantro, chopped

How to Make

  • Step 1: Prep the vegetables in separate bowls. Set aside.

  • Step 2: Heat oil over medium flame. Add the cumin seeds, stirring often, until they sizzle for 5 seconds. Add the ginger and green chili and stir for 3-4 seconds. Add the chopped onions and cook until translucent, about 4 minutes.

  • Step 3: Add the carrots and potatoes, saute for 3-4 minutes. Add salt and sugar, stir to combine. Add 1/4 cup water, cover and lower heat. Cook until veggies are tender.

  • Step 4: Stir in the frozen peas. Taste and adjust seasoning. Simmer until peas are warmed through. Stir in the chopped cilantro.

  • Step 5: Serve hot or at room temperature.
