Step 1: Prep the vegetables in separate bowls. Set aside.
Step 2: Heat oil over medium flame. Add the cumin seeds, stirring often, until they sizzle for 5 seconds. Add the ginger and green chili and stir for 3-4 seconds. Add the chopped onions and cook until translucent, about 4 minutes.
Step 3: Add the carrots and potatoes, saute for 3-4 minutes. Add salt and sugar, stir to combine. Add 1/4 cup water, cover and lower heat. Cook until veggies are tender.
Step 4: Stir in the frozen peas. Taste and adjust seasoning. Simmer until peas are warmed through. Stir in the chopped cilantro.
Step 5: Serve hot or at room temperature.
