Step 1: Heat oil and butter in a large, high-sided stainless steel or cast iron skillet over medium-high.
Step 2: Add potatoes and toss until coated.
Step 3: Cover and cook, undisturbed, for 5 minutes.
Step 4: Add onions and salt, pepper, and garlic powder to taste toss until combined.
Step 5: Cook 15 minutes longer, uncovered, flipping potatoes every 5 minutes, until potatoes are tender on the inside and are browned on the outside.
Step 6: Season to taste.
