Ingredients

The ingredients are:
  • 1 cup white wine
  • 2 cups water
  • 1/4 cup kosher salt
  • 1/4 cup brown sugar
  • 2 bay leaves
  • 2 cloves garlic, crushed
  • 8 peppercorns
  • 1 whole 3 to 5-pound chicken, rinsed and organs removed

How to Make

  • Step 1: Mix all the ingredients except the chicken in a large re-sealable bag and swish until salt and sugar are completely dissolved.

  • Step 2: Add the whole raw chicken, seal the bag removing as much air as possible. Refrigerate and allow to brine for at least 6 hours or overnight.

  • Step 3: Remove chicken from the brine, rinse, and pat dry.

  • Step 4: Cook chicken in a roasting pan, uncovered, in a 350-degree oven until internal temperature reaches 165 degrees Fahrenheit when inserted in the thickest part of the chicken.
