Ingredients

The ingredients are:
  • 1 tart crust
  • 1/4 cup pine nuts
  • 1 1/2 pounds assorted cherry tomatoes, halved if large
  • 1 tablespoons olive oil
  • 2 tablespoons oregano, fresh, chopped
  • 2 ounces goat cheese, crumbled
  • 1/2 cup green olives, pitted (Castelvetrano olives or your favorite)
  • Oregano leaves

How to Make

  • Step 1: Prepare tart crust and place in a 11 x 8 inch rectangular pan but before baking press the pine nuts into crust. Bake according to your favorite recipe and let cool before proceeding.

  • Step 2: After cooking crust, increase oven temperature to 400 degrees F.

  • Step 3: In a bowl toss the tomatoes with olive oil, the chopped oregano, 1/2 teaspoon slat and 1/4 teaspoon pepper and transfer to baked crust. Bake 15 minutes.

  • Step 4: Top with the goat cheese and olives and bake another 10 minutes.

  • Step 5: Sprinkle with oregano leaves.
