Step 1: Heat the oil in a saucepan over medium-low heat. Gently fry the onion until transparent. Remove from heat and add remaining ingredients, except chicken. Stir to combine.
Step 2: Place the thighs in the slow cooker. Pour over the sauce mixture, moving the thighs,around until they are all coated in the sauce.
Step 3: Cover with lid. Cook on low for 8 hours. (You can also cook this recipe on high for 3 1/2 to 4 hours or until chicken is cooked through.)
Step 4: Serve chicken with rice and steamed vegetables.
